There comes a point every summer when a garden gets unreasonable.

You know the point.

Yesterday you had three tomatoes.

Today you have seventeen.

The beans that weren't quite ready Tuesday have apparently held a meeting and decided to mature all at once.

There are cucumbers hiding under leaves that were nowhere to be found yesterday. Squash appear overnight with the dimensions of baseball bats. Corn needs pulling. Potatoes need digging. Peppers need picking.

And just about the time you've handled all that, somebody walks through the door carrying another bushel basket.

Today, that's when we start giving vegetables to the neighbors.

A hundred years ago in Appalachia, you might have done that too.

But first, you made sure there would be enough food to get your own family through February.

Because the garden wasn't just growing supper.

It was growing winter.

August was when the clock started ticking

We tend to think of harvest time as the reward for gardening.

For an Appalachian family dependent on what it raised, harvest was also a deadline.

Once a tomato came off the vine, something had to happen to it.

Once beans were picked, the clock was running.

Once peaches or apples ripened, you couldn't tell them to hold on until next Tuesday because you had other things to do.

Food spoiled.

Winter didn't care.

So late summer and early fall became some of the busiest weeks of the year.

The goal was remarkably simple:

Take something that would last a few days and figure out how to make it last a few months.

Mountain families had a surprising number of ways to do it.

Dry it.

Can it.

Pickle it.

Ferment it.

Store it somewhere cool.

Turn it into something else.

And sometimes leave it right where nature had put it until you were ready for it.

The National Center for Home Food Preservation still divides preservation into many of those same basic methods: canning, drying, pickling, fermenting, freezing, curing and storage. The equipment has changed. The underlying problem has not. Food lasts longer when you control the things that cause it to spoil.

The cellar was a refrigerator that didn't plug in

Not everything needed to go into a jar.

Some foods would keep surprisingly well if you gave them the right conditions.

Potatoes, turnips, carrots, cabbage and other sturdy vegetables could be stored in a cool cellar, basement, pit or other protected place.

A good root cellar took advantage of something no Appalachian family had to buy from an electric company.

The earth stays cool.

Modern horticultural guidance still recommends cool, humid storage for many root vegetables and notes that traditional root cellars provide exactly those conditions. Cabbage can also keep for months under the right cold, moist conditions.

There was no little light that came on when you opened the cellar door.

No ice dispenser either.

But there might be potatoes down there in January that had been dug in September.

That was the important part.

Then came the jars

There may be no sound more associated with an old-fashioned country kitchen than the little ping of a canning jar sealing.

For generations of Appalachian children, that sound meant Mommy or Grandma had won another small battle against winter.

Beans.

Tomatoes.

Corn.

Beets.

Pickles.

Relish.

Peaches.

Applesauce.

Blackberries.

Some families canned almost anything they could safely put by.

By late summer, rows of jars began appearing on shelves.

Red tomatoes.

Green beans.

Yellow corn.

Dark berries.

Amber preserves.

They weren't decorations.

They were an inventory.

Every jar represented a meal the family wouldn't have to find somewhere else after the garden was dead.

Modern food science explains canning as heating food in a sealed container sufficiently to destroy dangerous microorganisms and prevent recontamination. Today's tested procedures are much safer and more precise than many old family methods, particularly for low-acid vegetables, which require pressure canning under current USDA guidance.

That distinction matters.

Our grandparents were clever people.

They were not magically immune to botulism.

Some old techniques belong in our memories rather than our kitchens.

But the principle behind all those jars was brilliant.

Capture August while you have it.

Cabbage had its own plan

Sometimes preservation meant allowing microscopic organisms to do some of the work.

Cabbage could become kraut.

Cucumbers could become pickles.

Food that would eventually spoil in its fresh form could be transformed through fermentation or pickling into something that lasted much longer.

Fermentation is among humanity's oldest food-preservation techniques, and it remains a recognized preservation method today.

But nobody sitting in an Appalachian kitchen needed a lecture on microbiology to know whether the kraut was coming along.

They knew because somebody had shown them.

That's an important part of this story.

This knowledge usually didn't arrive in a manual.

It arrived through another person's hands.

A mother showed a daughter.

A grandmother showed a granddaughter.

An aunt told you how much salt.

A neighbor showed you how something was supposed to look.

Children learned because there was work to do and they were standing close enough to be handed some of it.

That's how a food-preservation system became a culture.

Fruit had to be dealt with too

Then there were the apples.

An Appalachian apple tree in a good year did not politely produce six apples for a pie.

It produced apples by the bushel.

Some varieties stored well.

Others were dried.

Some became apple butter.

Some became applesauce or preserves.

Some went into pies immediately because there are limits to how much hardship a person should be expected to endure.

Berries became jams and jellies.

Peaches went into jars.

Fruit was dried wherever conditions allowed.

Drying works because removing enough moisture limits the ability of microorganisms to grow. The science sounds clinical. The old method wasn't. It was slices of fruit laid out or hung where warm, moving air could get to them.

The Library of Congress has documented these kinds of American food traditions extensively, including Appalachian and West Virginia practices involving drying, canning, wild foods and other ways of “putting foods by for winter.”

That old phrase tells the story better than almost anything else.

Putting food by.

Not storing groceries.

Putting food by.

Saving it because you knew you were going to need it.

The garden was only one part of the pantry

And the family's winter food supply didn't stop at the garden fence.

Corn might be dried and ground into meal.

Beans could be dried completely for soup beans.

Wild berries could be preserved.

Nuts could be gathered.

Apples came from orchards.

Meat had its own preservation calendar.

A hog slaughtered when cold weather arrived could become sausage, bacon, salted meat and cured ham.

What emerged was not one preservation technique but a system.

A family looked at everything it could raise or gather and asked the same question:

How do we keep this until we need it?

That's a very different way of looking at food from the way most of us see it now.

We see a tomato.

They might have seen Tuesday's supper, six jars of winter tomatoes and the beginning of a batch of juice.

We see too many cucumbers.

They saw pickles.

We see a cabbage that needs using.

They saw kraut.

We see leftovers.

They saw tomorrow.

Waste meant something different when you grew it yourself

This may be the hardest part for us to understand.

For most Americans today, wasting a little food is irritating.

For a family that had planted the seed, worked the ground, hoed the weeds, carried the water, fought the insects, picked the crop and depended on that food to help get through winter, waste looked different.

Throwing away a basket of beans wasn't just throwing away beans.

It was throwing away work.

And possibly meals.

That didn't mean every Appalachian family was self-sufficient or that mountain life was some perfect world where nobody went hungry.

Far from it.

Crop failures happened.

Drought happened.

Floods happened.

Insects happened.

Families had bad years.

People went without.

That uncertainty was precisely why preserving food mattered so much.

You saved what you could because you didn't know what February was going to bring.

Look at an old pantry and you can read the summer

Imagine opening the door to an Appalachian family's winter pantry.

There are jars lined along wooden shelves.

Beans.

Tomatoes.

Pickles.

Apple butter.

Peaches.

Maybe kraut nearby.

Potatoes and other vegetables stored somewhere cool.

Dried foods put away where moisture couldn't reach them.

Each thing on those shelves tells you what happened months earlier.

A jar of beans says the bean patch did well.

Apple butter says somebody had apples and a long day to stir them.

Pickles say July brought more cucumbers than anybody could eat.

Dried apples say somebody sat down with a knife and did something about an orchard that was producing faster than the family could consume it.

The pantry was almost a diary.

You could read summer on the shelves.

And on a cold January evening, when the ground outside was frozen and not a single bean was growing anywhere nearby, somebody could walk into that pantry and bring August back to the supper table.

We gained convenience. We lost the deadline.

I don't want to pretend the old system was better in every way.

It was exhausting.

Canning over a hot stove in August is not charming when you're the person standing over the hot stove.

Picking bushels of beans is not nostalgia while your back hurts.

A freezer is a wonderful invention.

So is a grocery store.

And there is something to be said for deciding in February that you want green beans and having them ten minutes later.

But convenience changed our relationship with the harvest.

The garden doesn't have to last all winter anymore.

If ours quits producing, Kroger's apparently doesn't.

That removed a tremendous burden.

It also removed something else.

Urgency.

When a generation knew there would be no fresh tomato in January unless August's tomatoes were preserved somehow, August mattered differently.

Food mattered differently.

Waste mattered differently.

And knowledge mattered enormously.

Because somebody in that household had to know how to turn a garden that lasted four or five months into food that lasted twelve.

That's what those shelves of jars represented.

Not poverty.

Not quaint mountain decoration.

Knowledge. Labor. Planning. Survival.

The garden eventually died every fall.

The remarkable thing was that, inside the house, it kept feeding people anyway.

Winter came.

The garden came with them.
